What are antioxidants and free radicals?

Antioxidants are a group of chemical compounds. Their task is to protect the body's cells against free radicals, so-called oxidative stress. These free radicals are unstable molecules that are formed naturally in our bodies and it is precisely when the balance between the amount of free radicals produced and their neutralization by antioxidants is disturbed, that our immune system is weakened and the risk of various types of diseases increases. What contributes to more free radicals in the body? There are several causes including: stress, age, UV radiation and poor diet.

Antioxidants in foods

We find antioxidants in vegetables and fruits, especially in berries. Raspberries, strawberries, blueberries, as well as beetroot, chicory and kale will give us a large dose of antioxidants. But antioxidants also occur in herbs and spices, and those that have the strongest effect on free radicals include: cinnamon, ginger, turmeric, basil, oregano or ground cloves.

Unfortunately, heat treatment can help reduce the valuable antioxidants. Tomatoes may be an exception, as the lycopene found in tomatoes is more active in purees or juice than in raw tomatoes.
