Forest honey
Forest honey is a honey where the source of honey is not nectar but instead is honeydew. Honeydew is the secretion of various lice that feed on tree leaves collected by bees. This secretion is sticky and sweet and appears mainly in the summer in the form of drops on leaves or branches. This sweet substance attracts bees that collect this liquid.
Forest honey contains minerals such as potassium, calcium, sodium, phosphorus, magnesium and manganese. The honey can also contain twice as much glucose as fructose. Compared to nectar honey, it has twice the amount of proteins, amino acids and enzymes, and also contains small amounts of vitamins A, B2, B6, C, PP and K.
Forest honey can be used to sweeten tea or for baked goods.
Forest honey should not be added to drinks with a temperature above 40 degrees. In this case, it loses its most important properties. Do not use for children under 1 year.
