Potassium sodium tartrate what is it?

The Swedish Food Agency describes potassium sodium tartrate as the sodium potassium salt of tartaric acid. The salts of tartaric acid are called tartrates. This substance was first produced by a pharmacist, Pierre Seignette, of La Rochelle, France. As a result, the salt was known as Seignett´a salt or Rochelle salt.

The substance occurs naturally in many fruits, including grapes. Produced as a by-product in the wine industry. As a food additive, its E number is E337. Used as an acidity regulator and in baking powder together with sodium carbonates (E 500). Strengthens the action of antioxidants to prevent rancidity of oils and browning of peeled fruits and vegetables.

Usage

Used in e.g. meat and cheese products and baking powder.

Ingredients: Potassium sodium tartrate. Its molecular formula is NaKC4H4O6 · 4H2O.

The product is not allergenic, but care should be taken when using it for the first time.

Do not exceed the intake of 30 mg/kg body weight per day.
